STT: Sarikei Salad




SARIKEI SALAD
A sweet and piquant salad aptly named after the pepper and pineapple district of Sarikei in Sarawak. Serves 4.

Ingredients
500gm minced chicken
salt and pepper
cooking oil
100gm pineapple, cut into thin strips
1 clove garlic, finely chopped
10gm ginger, cut into thin strips
1 red chilli, cut into thin strips
1 teaspoon green peppercorns
6 basil leaves, shredded

Method
1. Season minced chicken with salt and pepper.
2. Heat cooking oil in a pan and fry the minced chicken till cooked. Remove and set aside to cool.
3. Put chicken and all the other ingredients in a mixing bowl. Mix well.
4. Serve chilled.
